❤️ Why This lentil salad is So Good

This lentil salad is one of my weekly go-to’s especially in the summer. It has a really fresh, tangy dressing and uses fresh herbs and tomatoes to give it a real burst of flavour. Whether you use canned lentils or make yours from dry, this recipe comes together in minutes and just keeps getting tastier as it stores in the refrigerator.


🍌 Ingredients & Notes

For this Lentil Salad, you’ll need:

Lentils either drained from a can or made from dried.

Fresh parsley which not only makes it look pretty but boosts the vitamin factor.

Cherry tomatoes which balances the savoury with the sweet .

Red onion for not only their pretty colour but also their milder flavour.

Feta cheese which can be omitted but I like the saltiness it brings to the salad rounding out the savoury and sweet flavours.

And finally olive oil, lemon juice, garlic and oregano to bring it all together.


🧑‍🍳 Instructions (Step-by-Step)

Step 1: Add boiled or canned lentils to a large bowl.

Step 2: Finely chop the parsley and add to the bowl, along with quartered cherry tomatoes.

Any tomatoes will do as long as they are cut into smaller chunks. Cherry tomatoes just give it that extra sweetness.

Step 3: Finely chop the red onion and leave aside as I like to add it to the marinade before adding it to the bowl.

Step 4: If you have feta cheese on hand, add it to the salad.

I like using the cubed variety and just throw a handful in.

Step 5: In a smaller bowl add the extra virgin olive oil, lemon juice, garlic, oregano, salt and pepper as well as the chopped onion.

Step 6: Combine all the ingredients in the large bowl and then add the marinade to it and mix again.

Step 7: You can serve this immediately or keep in the fridge for the week. I like to mix it before I serve to ensure everything gets coated in the marinade.

💡 Expert Tips

Adding the onion to the marinade helps to take off the strong edge and pickles it slightly. Also make sure if you’re buying canned lentils to only buy lentils in water, no other additives. And if you choose to make your own , you can use either brown or green lentils. The brown lentils may be slightly softer but won’t affect the overall salad.

Lentil Salad

Ingredients
  

  • 1 Cup Dry brown lentils (if using canned,cooked variety, I use 2 cans)
  • 1 Cup Cherry tomatoes
  • 1/2 Cup Freshly chopped parsley use more if you prefer
  • 1/4 Small red onion
  • 1/4 Cup Feta cheese cubed or crumbled
Salad Dressing
  • 1 Lemon ( juiced )
  • 1/4 Cup Extra virgin olive oil
  • 1 Garlic clove minced
  • 1/2 tbsp Dried oregano
  • 1/2 tsp Salt

Equipment

  • 2 Bowl 1 for the salad and one for the marinade
  • 1 Knife
  • 1 Lemon juicer

Method
 

  1. Step1: Add rinsed, canned lentils to a bowl or if using dried lentils, follow packet instructions and once done add to a bowl.
  2. Step 2: Cut up cherry tomatoes in quarters or if using larger tomatoes, diced uniformly and add to the bowl.
  3. Step 3: Finely chop parsely and add.
  4. Step 4: Crumb the feta or chop into cubes and add
  5. Step 5: In a a small separate bowl dice up the onion. Add olive oil, lemon juice, garlic and the seasonings. Allow to sit for a few minutes. Add to the salad. Toss to fully coat all the ingredients.
  6. Step 6: Serve immediately or leave in an air-tight container in the fridge. Will keep for the week.
