❤️ Why These MAson Jar chicken and noodles Are So Good

Ok so here me out. Ever tell the kids what’s for diner only to instantly regret it because they never seem happy one way or the other? Making these jars will change that. This meal is as DIY as it gets and your child will love getting to choose what veggies they add to their jar. They won’t moan or complain because they are the boss and they’ll want all the pretty colours not realising they’re choosing healthy options! Add to that the cooked chicken that you already shredded, this meal comes together in minutes, is packed full of flavour and is super nourishing.


🍌 Ingredients & Notes

For these Chicken and Noodle Mason Jars, you’ll need:

Shredded cooked chicken

Rice noodles ( gluten free )

Julienned veggies such as carrots, broccoli, yellow and red pepper, sliced mushrooms, frozen peas. Honestly whatever veggies you have on hand and enjoy eating!

Fresh cilantro.

Soy sauce, veggie (or chicken) stock, garlic, ginger, lemon or lime juice.

Hot water


🧑‍🍳 Instructions (Step-by-Step)

Step 1: I always like to start by boiling my chicken in stock, then shred it once its done and keep the stock to either add to this meal or use another day.

Step 2: Add soy sauce to each jar along with lemon juice, 1/2 veggie cube and garlic and ginger ( there are so many variations to these so play around with the flavours you enjoy, these are the simplest ones, I’ll post my thai version soon as well) .

Step 3: Add shredded chicken along with all the veggies you’ve decided upon. Leave room for rice noodles and cilantro.

Step 4: Add boiling water to your jar but leave space at the top, don’t completely fill.

Step 5: Let sit for between 5-10 minutes. Once ready either eat directly from the jar or pour into a large bowl. We like to eat ours with chopsticks but a fork is fine too!

Ingredients
  

For 1 portion
  • 1/2 Chicken breast (cooked and shredded)
  • 1 Tsp Soy sauce
  • 1 Tsp Lemon Juice
  • 1/4-1/2 Chicken stock cube
  • 1 Tsp Fresh ginger
  • 1/2 Tsp Fresh garlic
  • 1/2 Cup Veggies Cut into matchsticks eg: carrots, broccoli, cabbage, bell peppers, peas
  • 1 Nest Rice noodles
  • 1/4 Cup Fresh cilantro whole (dont worry about chopping up)
  • Hot water to cover

Equipment

  • Mason jar
  • Kettle
  • Chopsticks optional but fun

Method
 

  1. Step 1: Add soy sauce, lemon juice, stock cube, ginger, garlic, veggies, cooked shredded chicken , rice noodles and cilantro to a jar.
  2. Step 2: Add boiling water to the jar until nearly full but not completely, leave about an inch. Add lid.
  3. Step 3: Allow to sit for 10 minutes then carefully with oven gloves , tilt jar to fully mix all the ingredients and remove the lid. Eat straight from the jar or pour into a large bowl.
  4. Step 4: Enjoy!
